ESSENTIAL DUTIES

 

 

 

 

 

 

 

The AFSM/Head Chef is responsible for ensuring that the standards and quality of the food is maintained to the highest level at all time, particularly in the absence of the Food Services Manager. The AFSM/HC is responsible to ensure that we are following the regulations of Ottawa Public Health. This role will be hands-on with both food preparation and ensuring proper service in the dining room. The AFSM/HC must balance overseeing the cooks in during meal preparation, providing feedback and instruction while also being present in the dining room to work with the servers and provide a supervisory presence for the residents to voice their feedback.

Customer Service:

  • Follows up on all resident and family enquires (takes accountability to ensure reply is given within 48 hours)
  • Fulfills commitments in a timely and responsive manner
  • Serves and interacts with residents on a daily basis in a respectful and supportive manner.
     

Qualifications:

  • Cook Level 1 Certificate or equivalent number of years.
  • Certification in the Food Handlers Course with recertification every 5 years.
  • Experience in quantity food production.
  • Ability to read and write English, plus understand oral and written directions.
  • Ability to direct and supervise staff.
  • Free of communicable diseases.
  • Ability to lift heavy objects, stand for long periods of time, walk short distances through out the day and tolerate the heat from the kitchen.
     

Principle Duties:

  • Adheres to predetermined menus and recipes.
  • Prepares therapeutic and texture modified diets.
  • Responsible for safe food handling practices.
  • Ensures a clean and safe working environment.
  • Works under the direction of the Food Service Manager and Executive Director.
  • Replace absent co-workers as is necessary in the absence of the Manager, Food Services.
  • Prepare and serve nutritious meals to our residents in a safe sanitary manner in accordance with Public Health Regulations, Provincial Guidelines, Canada’s Food Guide and in compliance with Sanitation Code
  • Responsible for food production including maintaining food quality, appealing presentation and efficient food preparation
  • Liaising with relevant companies for food orders
  • Ensure that all meals are done on time  (making sure we have enough quantities to serve all residents)
  • Making sure the presentation of the food is excellent before reaching the residents
  • Maintain and controlling stock levels of kitchen supplies
  • Ensuring correct stock rotation procedures are being followed
  • Doing daily check of fridge , freezer and stock room to make sure we are following public health (making sure nothing is on the floor and that everything is being labelled)
  • Taking part in creating new recipes and menus for rotation. (making sure we are following the Canadian food guide)
  • Being available for special event and function and creating the menu.
  • Being available to cook, serve or do dishes when we are short staffed
  • Help with cook schedule
  • Will need to attended Food Committee once a month
  • Performs other duties as directed by the Manager, Food Services.

 

 

Oversee and supervise all kitchen staff

  • Ensure that all staff are aware of their job description and what is expected from them.
  • Teach new staff the skills needed to perform their new role and what we required of them
  • Give positive and negative feedback to staff about their performance
  • Delegate duties to the staff to make sure all the work is done on time
  • Oversee and monitor the food preparation and product going out to the resident
  • Ensure that all staff are aware and are following safe work practice at all time
  • Assist the FSM in scheduling, payroll, training, coaching & discipline of staff

 

General Conditions

The successful candidate for this position will have a schedule that entails working three evening shifts per week as well as working alternating weekends.  This schedule is subject to change as per operational requirements.
